It’s got to that time of year where no one wants to be missing out on a hearty meal, least of all the vegetarians (so I’m told).

Now the temperature outside has started to drop and the days are closing in, I find I can’t help but crave warming comfort foods. This is a super simple way to pack in a load of vegetables, indulge in a bit of melted cheese and enjoy the comforts of a tomato soup that’s not from a tin. Don’t leave out the rosemary as this takes this dish to a whole new level.
This dish is super simple and fresh, and looks pretty good too. If you’re mad on spice then be generous with the jalapeños and add extra fresh chillies to garnish. If coriander’s not your thing then a sage butter would work just as well. Definitely give this one a try – it’s not to be missed.
